I loved reading this. I didn't know there was a goat's cheese season! I was told that barnyard taste was because the Billy goat was near the milk and contaminated it. These are the same kinds of stories I love telling on my tours (but we don't usually visit cheese shops as I don't yet know enough about cheese!).
I grew up in France and goat cheese was always one of my favorite cheeses, but I had not idea about this! Thank you! Now, next time I eat it I’ll have a much better appreciation of it!

I'm a bit of a Francophile, lived in Paris as a student (a long time ago...), so not a total novice when it come to Parisian food, but I learned SO much and had such a fun time. And, of course, ate very well.
I remember the experience of tasting goat cheese with thyme flavor in one of your cheese explosion session that you led. You told us then that the flavor comes from what the goats were eating. I have told the story numerous times to friends and colleagues. It’s amazing! Thank you
I can totally relate! Was it six or seven years ago that I took my first Paris by Mouth cheese tour with you? I have re-told your story about Saint-Nicholas cheese to many others, and I look for it each spring. Absolutely sublime.
I tend to be more into harder French cheeses like Gruyere but this sounds so good

Regina! I think we're coming up on the 10 year anniversary of our tour - wasn't it May 2013? We were as young as those goat cheeses :)
Oh my! Yes, much younger then, and I think the last three have to be counted in dog years (at least when it comes to my memory!).
