Chef Matthias Marc left Substance in late 2025 and has been replaced in the kitchen by the duo who ran Hémicycle, which is now closed. We loved the work of chef Flavio Lucarini and pastry chef Aurora Storari at previous locations, including Le Bistrot Flaubert. We haven’t returned to Substance since the change.
