Copious doesn't begin to describe the dishes at Chef Stéphane Jégo's stalwart 7th arrondissement Basque bistro.
Not much has changed here since pre-pandemic days: the cozy dining room is still cut through by long, shared tables; Jégo still presides, booming voice and all, over the open kitchen.
