Sauce Périgueux

Sauce Périgueux and its cousin sauce Périgourdine come from the Périgord region of southwestern France.

When French sauces bear the name of a region, they usually incorporate a famous ingredient from that region. Périgord is most noted for its truffles, and sauce Périgueux most typically features truffle shavings, usually with white wine and veal stock.
