What a bummer. The food looks and sounds so nice but a lack of hospitality, desultory service, and feeling gouged by an upsell, along with the sense of missing something would take all the fun away. Your review reminds me of a phrase Pete Wells used in his take down of Per Se years ago, “a no fun house.”
I would never worry about being an outlier in rating anything. I find your experience with your first booking a real problem and a lawyer's letter could have sorted this out.
Some 30+ years ago I joined one of only 3 queues I have joined in Paris. It was for a new Indian restaurant and the first in Paris. It was lavishly furnished with fine service but the food was truly mundane, yet the customers, new to this food, seemed very pleased.
Wow...I'd only heard good things about this place, but simply based on how they're gouging on the wine prices (a HIGH price at retail in Paris for that Cotat Sancerre is maybe 50€...139€ is crazy and trying to up-sell you to the Cotat for an additional 40€ is just rude!) I can easily avoid sitting under the interrogation lights...!!!
WOW, That was a lot of money to forfeit due to illness AND I would be willing to bet that they filled your reservation. That attitude alone will have me decline to ever eat there. I would have been tempted to go sick anyway and find a reason to cough on and touch as many staff as possible. As well as maybe vomit on my meal.
This review and the disclosures are ample reason to rely on PbM as the first source for restaurant reviews in Paris. My experience with restaurants reviewed here has been very satisfying.
100% agree. This thoughtful (and I think quite balanced) review almost gives further weight and authenticity to the positive reviews we see on PBM. I’ve eaten at two restaurants recommended here on a recent trip to Paris and can say they were firmly amongst some of the best restaurants I’ve eaten at in the many years I’ve been coming to the city.
thank you for an honest review. Rare these days.

Had to laugh at “interrogation room.” Some of the dishes looked like they had come from Madame Tussaud’s. “Fine” seems generous.
